Sit down with Author & PhD candidate Fionnán O’Connor, as he takes us through his journey with Meath’s Boann Distillery, as he recreates over 200 years of lost distillery mashbills.
As a part of his PhD research, Fionnán has trolled through numerous archives, and historical troves to find the specific recipes from distilleries the length and breadth of the island, and thanks to the team at Boann Distillery, he now has an avenue to uncover and ressurect the lost flavours of Ireland’s by-gone distilling eras.
Listen in as Fionnán describes his process from archive to still and how this investigation is designed to bring back these lost flavours back to Ireland’s modern distilling landscape.
