As I am sure you are all aware, last year’s Pedro Ximenz Dream Cask 20 Year Old was an absolutely stunning whiskey, but it needs to be said, this year’s expression wipes the floor with the 20. So much flavour and so expertly balanced, this is a phenomenal whiskey.

Bottled at 51.5% ABV. Non-Chill Filtered.

Nose: this has an incredibly expressive nose. Lots of stewed dates, pot still spices and brilliant wood character (the smell is exactly the smell you get walking through Midleton’s warehouses) which is amazingly coupled with this fantastic bourbon influenced back bone of bountiful toffee, creamy vanilla, burnt sugar, with a sweet wood warmth to the nose too.

Palate: This is full of fruits and wood character. The strong bourbon influence follows over from the nose upfront with an absolute Explosion of fruit once the whiskey covers your palate. Tropical fruits, stewed dark fruits and fleshy and tart red berries explode with juiciness and zest. This is followed by delicious pot still spices, a herbal aspect and a hint of stone fruits suc as apricot.

With the addition of water, the explosion of tropical fruits subsides and is replaced by a delicious and viscous combination of red berries and currants.

Finish: Long lingering finish with pot still spices, sweet fruitiness and light wood tannins remaining many minutes after you have taken the last sip.


All in all, my round up is, the other Dream Casks were great. This is phenomenal… simply, wow.
